  UBE MACAPUNO CAKE Filipinos love ube - purple yam. Filipinos love macapuno - young coconut strings in syrup. And my Dad loves both! So for his 66th birthday, we surprised him with this. From someone who's a newbie baker and cook, it is a most precious gift of all! INGREDIENTS PROCESS Prepare ahead of time : Remove 1 cup butter from the refrigerator 2-3 hour prior to soften in room temperature. Prepare ahead of time : 1 cup grated ube (purple yam). Using the stovetop, fill a pot with enough water to cover the ube. Cover the pot.  Bring to a boil for about 20-25 minutes.  Ube is cooked when ube is tender.  Use a fork to piece through.   UBE CHEESE PAN DE SAL Filipinos are innovative people. Ube Cheese Pan de Sal is a different take on the traditional Pan de Sal or Filipino bread roll. This time, ube or purple yam and cheese are added. I don't know whether this should be a breakfast or a snack!  INGREDIENTS PROCESS 4 cups bread flour 1.     Mix.   SIOPAO Siopao is simply a steamed bun with beef, chicken, or pork filling. In America, there are many variations of siopao and is even available fresh in Filipino bakeries or frozen in freezer aisles of Asian supermarkets. Apart from the bun, you can get creative with the filling to satisfy your craving.  INGREDIENTS PROCESS 3 ½ cup all-purpose flour 1.     In a deep mixing bowl, mix flour, sugar, and salt. 2.     Mix-in yeast. ½ cup sugar ½ tsp. salt 1 (2.5 oz.) active dry yeast 1 cup water, lukewarm 3.     Add water and oil into mixture. 4.     Mold into dough.
