Luto-Luto: Ube Cheese Pan de Sal
UBE CHEESE PAN DE SAL
Filipinos are innovative people. Ube Cheese Pan de Sal is a different take on the traditional Pan de Sal or Filipino bread roll. This time, ube or purple yam and cheese are added. I don't know whether this should be a breakfast or a snack!
INGREDIENTS |

4 cups bread flour |

Mix. Set aside. |
1 tsp. instant dry yeast |

¼ cup butter |

On stovetop,
melt butter in low heat. 3.
Mix-in milk, salt,
and sugar. 4.
Mix-in oil and
ube flavor. |
1 cup milk |

2 tsp. salt |
|
½ cup sugar |
|
1 tsp. oil |
|
3 tsp. liquid ube flavor |
|
2 eggs, beaten |
5.
Turn-off
stovetop. 6.
Mix-in eggs. |

7.
Add #2-6 into
flour/yeast mixture (#1 above) |
EXTRA: ¼ cup bread flour |
8.
Knead for about
5-6 minutes, sprinkling bread flour intermittently. 9.
Cover and proof
or place in warm place for about 60 minutes until dough doubles in size. |

10.Cut dough into about 24 pieces and flatten. |

11.Add cheese inside each flattened dough. 12.Fold dough ball so cheese is fully wrapped. Roll dough into a ball. |

13.Roll on breadcrumbs. |

14.Arrange on baking sheet covered with parchment paper. 15.Cover and proof/place in warm place for about 1 hour. |
While dough is rising, preheat oven to 325°F. |

16.Bake for about 20 minutes. |
STORAGE: Store in airtight container
in room temperature for up to 2 days. |
