Luto-Luto: Ube Cheese Pan de Sal

 UBE CHEESE PAN DE SAL

Filipinos are innovative people. Ube Cheese Pan de Sal is a different take on the traditional Pan de Sal or Filipino bread roll. This time, ube or purple yam and cheese are added. I don't know whether this should be a breakfast or a snack! 


INGREDIENTS

PROCESS

4 cups bread flour

1.    Mix. Set aside.

1 tsp. instant dry yeast

¼ cup butter

2.    On stovetop, melt butter in low heat.

3.    Mix-in milk, salt, and sugar.

4.    Mix-in oil and ube flavor.

1 cup milk

2 tsp. salt

½ cup sugar

1 tsp. oil

3 tsp. liquid ube flavor

2 eggs, beaten

5.    Turn-off stovetop.

6.    Mix-in eggs.

 

7.    Add #2-6 into flour/yeast mixture (#1 above)

EXTRA: ¼ cup bread flour

8.    Knead for about 5-6 minutes, sprinkling bread flour intermittently.

9.    Cover and proof or place in warm place for about 60 minutes until dough doubles in size.

 

10.Cut dough into about 24 pieces and flatten.

11.Add cheese inside each flattened dough.

12.Fold dough ball so cheese is fully wrapped. Roll dough into a ball.

Breadcrumbs

13.Roll on breadcrumbs.

 

14.Arrange on baking sheet covered with parchment paper.

15.Cover and proof/place in warm place for about 1 hour.

While dough is rising, preheat oven to 325°F.

 

16.Bake for about 20 minutes.

STORAGE: Store in airtight container in room temperature for up to 2 days.
